Cranberries-The Native American Fruit
Cranberries are an increasingly popular fruit. In 2002, more than half a billion pounds of cranberries were harvested in the United States. Of this half a billion pounds of cranberries, a small percentage are grown following the U.S. Department of Agriculture's strict guidelines for organic farming. How do Cranberries Grow?
Cranberries, a fruit native to North America, grow on a trailing vine. These vines thrive in particular wetland conditions, often referred to as bogs, which are primarily found in Wisconsin, Massachusetts, New Jersey, Oregon, Washington and other northern states.
Cranberries are harvested in late fall. After harvest, cranberry farmers flood the bogs with water. When frozen, the water helps to insulate the cranberry vine from frost damage. In springtime, farmers empty the bogs, and the cranberry vines produce blossoms. In mid-summer, these flowers drop their petals, and the tiny green center is exposed to the sun. Throughout the rest of the summer, this green node grows and turns into a ripe, red cranberry.

Ways to Enjoy Cranberries
Cranberries are a versatile and hearty fruit. They provide a good source of both vitamin C and dietary fiber, and add bright, vibrant color to winter tables. Check your favorite cookbook for recipes featuring cranberries in appetizers, sauces, breads, desserts and beverages.

- For a fun certified organic party punch, mix together 20 oz. (2 1/2 cups) Santa Cruz Organic® Cranberry Nectar, 32 oz. (4 cups) Santa Cruz Organic® Lemon-Lime soda and 12 oz. (1 1/2 cups) Santa Cruz Organic® Orange Mango juice. Serve over crushed ice and garnish each punch cup with a fresh cranberry.
- A warmer way to enjoy cranberries is by making your own mulled cranberry with orange and cinnamon. To do so, place 4 cups Santa Cruz Organic® Cranberry Nectar, one 3-inch cinnamon stick (preferably organic), 5 whole cloves (preferably organic), and 1 organic orange, peeled and sliced crosswise, in a large saucepan. Simmer for 20 minutes. Strain the mixture into a heat-proof pitcher and serve warm.
