African Peanut Butter Stew


Santa Cruz Organic® Products used in this Recipe:


Ingredients:

 

3-4 lbs of chicken pieces

Salt and Pepper

3 Tablespoons oil

1 large onion

1 cup SCO smooth light peanut butter

1 -14.5 oz can crushed tomatoes  

1 cup chopped carrots

1 cup chopped potatoes

1 can -14.5 oz garbanzo beans

½ teaspoon thyme

 

Directions:

 

Season chicken pieces with salt and pepper. Heat oil in a heavy frying pan. Working in batches, brown chicken pieces, transfer to a bowl a done. Add onions to pan and cook until brown and soft, about 5 minutes. Combine peanut butter and tomatoes with 1 cups warm water in a medium bowl. Stir mixture into frying pan, scraping up any browned bits. Return chicken to pan, add carrots, potatoes , garbanzo beans and thyme. Reduce heat to medium low, cover and simmer, stirring occasionally, until chicken is tender, about an hour.

Serve over cooked rice

Serves 4-6
