Pomegranate Dressing


Santa Cruz Organic® Products used in this Recipe:


Ingredients:

  • ¾ cup R.W. Knudsen Family® Cranberry-Pomegranate Juice
  • ¼ cup balsamic vinegar
  • ¼ cup extra virgin olive oil
  • 2 tablespoons Santa Cruz Organic® 100% Lemon Juice
  • 1 tablespoon Dijon-style mustard
  • Kosher salt or coarse sea salt and freshly ground black pepper

Directions:

  • To make the dressing, reduce cranberry-pomegranate juice and balsamic vinegar by boiling 5-7 minutes, until thickened, in a 1-quart saucepan.
  • In a small bowl, whisk cranberry-pomegranate reduction with lemon juice, olive oil, and mustard.
  • Season to taste with salt and pepper.
